This cheese scone recipe makes 6 scones

This recipe is the one my Mum used to make for us when I was a child in the 1960s and 1970s. I have always thought they were the best cheese scones I have ever tasted, and that statement still stands to this very day.

I prefer to make these cheese scones using margarine, as it makes them lighter and fluffier. But if you don't have margarine, you can make these using unsalted butter instead.

Give them a go. I'm sure you will agree they are the best cheese scones you have ever tasted. Simply the best.

Ingredients

  • 115g plain flour
  • 1¼ tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cream of tartar
  • 1/4 tsp bicarbonate of soda
  • 28g margarine
  • 85g grated Mature English Cheddar cheese
  • Pinch of cayenne pepper
  • Milk to bind (approx 50ml)

If you want, double the ingredients to get 12 scones.

Cooking Method

  1. Sieve the dry ingredients into a large bowl.
  2. Rub the margarine into the flour.
  3. Mix in the grated cheese and cayenne pepper.
  4. Stir in the milk until the ingredients are bound together.
  5. Roll out the pastry to 2cm thickness and cut out your scones using a 2" pastry cutter.
  6. Place the cutout scones onto baking paper on a baking tray.
  7. Bake in the oven for 15 minutes at 210°C.
  8. Remove from the oven and place on wire a rack to cool.
  9. Eat whilst still warm and spread with butter.
