Easy and Delicious Mini Pork Pie Recipe

As an Expat, I've been missing my pork pies, and as I can't get them where I live, I have to make them myself. These pork pies are delicious and very easy to make. They are made with simple pork mince with no other pork meat cuts for ease.

This pork pie recipe makes 8 mini pork pies.

I'll make 'proper' traditional pork pies in another post. We are not adding jelly in the pastry cases to keep things easy. My lot are not too keen on the jelly in any case. This recipe is based on ingredients available here, as some ingredients we take for granted back home are difficult to find.

All you need to make these mini pork pies are some basic ingredients and about 1 hour of prep time. There is nothing difficult to make these fabulous mini pork pies; they are so easy.

This recipe will make 8 mini pork pies in a standard muffin baking tray. The tools needed are a mixing bowl, rolling pin, weighing scales, and an 8-cup muffin baking tray. We will make hot water crust pastry, the classic pastry used for making pork pies. The pastry ingredients are plain flour, lard, unsalted butter, salt, and water. I use 3mm spacers on my rolling pin to ensure the perfect thickness. The pork pie filling consists of pork mince, salt, white pepper, dried rosemary, and dried thyme.

Ingredients

Mini pork pie pastry ingredients (hot water crust pastry)

  • Flour - 200g plain four
  • Water - 90ml water
  • Butter - 45g unsalted butter
  • Lard - 50g lard
  • Salt - ½ tsp salt

Mini pork pie filling ingredients

  • Pork - 500g pork mince
  • Salt - ½ tsp salt
  • Pepper - ¼ tsp ground white pepper
  • Thyme - ½ tsp dried thyme
  • Rosemary - 1 tsp dried rosemary
  • Egg - 1 egg for egg wash

Make your life easier and measure out all the ingredients first before you start.

Method for making the mini pork pie pastry

  1. Sieve the flour and salt into a bowl and mix them together.
  2. Add the water to a small saucepan on low heat, add the lard and butter, and bring to a simmer.
  3. When the lard and butter have melted, pour the liquid onto the flour in the bowl and mix.
  4. Flour your work surface and turn out the contents of the bowl.
  5. Knead the dough gently until it is all mixed together.
  6. Place the dough in a plastic bag or cling film and refrigerate for at least 2 hours. You can also make the dough the day before. If you have done this, remove it from the fridge 1 hour before use.

Making the mini pork pies

  1. Add all the pie-filling ingredients into a bowl and mix with your hands for a few minutes.
  2. Divide the meat into 8 equal parts. Best to use digital scales for evenness.
  3. Make your egg wash by whisking a small egg.
  4. Grease your muffin baking tray with butter.
  5. Roll the pastry out to 3mm thickness and cut out 8x 12cm circles for the pie bases and 8x 6cm circles for the pie lids.
  6. Place the pie bases into the muffin tray cups and gently press the pastry into the bases of the cups.
  7. Place the divided meat portions into each pie base and gently press the meat down into the pastry cups to remove any trapped air.
  8. Now preheat your oven to 170℃.
  9. Brush the egg wash around the edge of the pie bases. Avoid getting the egg wash between the pastry and the baking tray, or the pie will stick during baking.
  10. Place the pie lids on top of the meat and gently press down. Then, crimp the pie base and lid together using your fingers and thumb to form a sealed pie.
  11. Cut 2 vents slits in the pie lid with a sharp knife.
  12. Coat each pie with egg wash, and again, take care not to get the egg wash between the pie and the baking tray to avoid the pie sticking during baking.
  13. Place the muffin tray in the middle of the preheated oven and bake for 40-45 minutes.
  14. When baking time is up, place the muffin tray on a wire rack for 5 minutes, then carefully remove the pies.
